Kayaking

A leisurely afternoon spent kayaking with the Paddling Center at Shingle Creek proved to be a truly unforgettable experience. Accompanied by an expert guide, we embarked on a scenic tour along the creek’s tranquil waters, taking in the serene beauty of the surroundings. As we paddled along, we caught glimpses of local alligators and their adorable young ones, a true highlight of the outing. Although our hour-long excursion was a delight, it’s worth noting that the Paddling Center also offers longer guided tours, as well as manatee-themed excursions, paddle boarding opportunities, and canoeing adventures. What I appreciate most about Kissimmee is its unique ability to bring nature enthusiasts up close and personal with the natural world.

Our whirlwind day at Disney World was an unforgettable experience that took us on a thrilling adventure across three magical parks: Epcot, Animal Kingdom, and Magic Kingdom. Our journey began at Epcot, where we savored every bite of international cuisine and drinks while exploring the park’s vibrant atmosphere.Next, we ventured to Animal Kingdom, where we embarked on a wild safari adventure and marveled at The World of Avatar. This park holds a special place in my heart, as it was once my favorite destination during childhood visits.Although I’m not typically a fan of rollercoasters, our day took an unexpected turn when we braved the Himalayan Expedition ride at Animal Kingdom. The adrenaline rush was exhilarating, and I screamed with delight throughout the entire experience! From there, we made our way to the iconic Magic Kingdom, a must-visit for any Disney enthusiast. This park is synonymous with Disney magic, and it’s hard to imagine a trip without experiencing its enchantment. As a self-proclaimed sweet tooth, I confess that my weakness at Disney lies in all the treats on offer. While I should probably curb my enthusiasm for these indulgences, I rationalize that life is short – and what better way to celebrate than with a Disney treat or two (or ten)? In fact, I’m already planning my next trip to Disney World during the festive holiday seasons, when special treats await.Kissimmee serves as an ideal base camp for exploring all the theme parks in Florida. Be sure to pack some stylish outfits for capturing those precious photo opportunities.

Celebration

If you’ve had the pleasure of visiting Celebration, Florida, but not on both occasions as I have, then you’re missing out on a unique experience. Founded by The Walt Disney Company in the mid-1990s, this master-planned community is an intentional replication of historical American small towns, complete with quaint cookie-cutter houses and white picket fences that seem straight out of a fairytale. When it comes to spending a leisurely afternoon, renting a bike from Celebration Bike Rental and exploring the area’s many trails and picturesque streets is a must. Keep your eyes peeled for alligators in the ponds and wild boar roaming freely – if you’re lucky, you might even spot these unexpected residents. After working up an appetite, head over to Columbia Restaurant, a local favorite that serves up mouthwatering cuisine that will leave you wanting more.

Disney Springs

When exploring Kissimmee, be sure to allocate some time for Disney Springs. This vibrant entertainment district offers an eclectic mix of shopping and dining experiences. Visitors can indulge in retail therapy, savor a wide range of cuisines, or simply take in the sights and sounds of the bustling atmosphere. For a sweet treat, I highly recommend Erin McKenna’s gluten-free vegan bakery, where you’ll discover delectable delights like cupcakes that will leave you wanting more. If dinner is on your agenda, Wine Bar George is an excellent choice, boasting not only delicious fare but also an impressive selection of wines to pair with your meal.

Margaritaville Resort

Our stay at the Margaritaville Resort in Kissimmee was truly unforgettable, especially since it coincided with National Margarita Day. The resort’s pool area was a haven of tranquility, and we spent hours soaking up the sunshine and relaxing in paradise. We opted to upgrade to one of their spacious cottage rentals, which offered multiple rooms, fully-equipped kitchens, and even private pools – perfect for large families or groups. The cottages’ colorful decor, reminiscent of Key West’s laid-back vibe, added to their charm. The resort boasts not one, not two, but three restaurants, each serving a range of mouth-watering dishes, including plenty of gluten-free options – a must-have for me when traveling. To make things even more convenient, the hotel offers a shuttle service to most local attractions and theme parks.I’m still grinning from ear to ear thinking about our stay at the Margaritaville Resort, and I can’t wait to return with my favorite group of friends – or solo, because let’s be real, it’s always a good idea to have some me-time in paradise. A huge thank you to Faith for joining me on this adventure and capturing its highlights through her lens.
