The addition of shaved chocolate curls elevates this Bailey’s Irish Cream no-bake pie to new heights, but even without them, it’s a delicious treat. If you do choose to add the curls, they’re surprisingly simple to make. Start by grabbing a bar of chocolate and a vegetable peeler. Shave the outer edge of the chocolate to create long, thin curls, or shave from the side for wider ones. To keep them fresh, refrigerate the curls until you’re ready to use them, as they can melt quickly. As an added bonus, making your own chocolate curls is just as much fun as enjoying any ‘mistakes’ that might occur along the way.

While it’s possible to make cream pie ahead, its components require some planning. The dessert needs to chill for at least 4 hours before serving, which means you’ll need to prepare it in advance. Fortunately, the pie keeps well in the refrigerator, staying fresh for up to 3 days. However, it’s best not to freeze this particular dessert with Irish cream liqueur, as it may separate upon thawing. A quick 15-minute chill in the freezer before serving can help create neater slices. As for substituting Bailey’s, you’re in luck! Amarula cream liqueur makes a suitable replacement, offering a creamy texture similar to Bailey’s but with an amarula fruit flavor instead of chocolate. If you prefer, you can also experiment with other Bailey’s varieties, such as salted caramel, almande, strawberries and cream, espresso crème, red velvet, apple pie, or vanilla cinnamon. Another option is Bailey’s Deliciously Light, which boasts 40% less sugar and 40% fewer calories than the original. While I’m fond of using classic Bailey’s for this Irish-inspired dessert, ultimately the choice comes down to personal preference.

Instructions

Combine the ingredients for the crust by crushing 28 regular stuffed Oreos into fine crumbs in a food processor, then mixing them with melted butter, sugar, and salt until well combined. Press this mixture into the bottom and up the sides of a 10-inch pie dish, using the flat base of a measuring cup to help flatten it evenly. Next, prepare the gelatin by combining cold water and unflavored gelatin in a small microwave-safe bowl, letting it sit for 5 minutes before microwaving for about 3 minutes or until liquid but not hot. In a stand mixer, whip heavy cream with vanilla and powdered sugar just until stiff peaks form, then set aside. Meanwhile, whisk together cold milk, half cup of Baileys, and instant vanilla pudding mix in a bowl, setting it aside as well. For the ganache, melt 3 tablespoons of Bailey’s in the microwave until boiling, then carefully remove and pour over top of chocolate chips. Let it sit for about 2 minutes before stirring until smooth. Fold about three-quarters of the whipped cream into the pudding mixture. Once the ganache has cooled but not hardened, drizzle some over the pie filling mixture, letting it pool at the top without mixing in. Repeat this process until all ganache and filling have been used, then gently smooth the surface. Finish by decorating with the remaining whipped cream and any optional shaved chocolate or curls. Finally, chill the pie in a refrigerator for at least 4 hours before serving.
